Thousands of people for show cooking, tastings, masterclasses and debates: Mercati d'Autore fills up at the Tor Carbone Alessandro Narducci hotel institute

(SAY) Rome, 12 May. – Thirty exhibitors, six sponsors, five hotel institutes involved, dozens of companies present. And then Show cooking, tastings, masterclasses on wine and oil and debates. Mercati d’autore< /a> closes on a high note, with a great event at the headquarters of the Tor Carbone-Narducci hotel institute.

There were thousands of citizens who arrived in the outdoor spaces of the school in the Appia park, on Sunday 12 May, to taste the products for tasting and for sale, both local and arriving from other countries. regions: from the tanned sheep from Poggio Mirteto and the pecorino cheese from Montefiascone, to the bread from Genzano, up to the cheeses from Montorio Romano, the porchetta from the Fucino plain, the smoked provola from Campania, the oil from Fara Sabina or the tigelle of Gaeta. The event brought culinary experts, presidents of Roman local markets, exhibitors and producers to what was once the villa of director Rossellini, and which now houses the Tor Carbone institute. Among them also the director of the Albinelli market in Modena, Claude Polidori, the president of the Halles de Lyon market Paul Bocuse, Amedeo Valente, the CEO of Agro Camera, Carlo Hausmann.

During one of the morning talks, the situation was taken stock of the future of the markets in Rome, destined to increasingly become squares and places for meetings and tastings. The markets will remain places to support the short supply chain and where to offer lower prices than large-scale retail trade to customers but they will increasingly become places that will offer customers different services, such as administration or co-working spaces. All in new or renovated structures.

“We are focusing a lot on local markets – confirmed the president of the Capitoline Trade and Productive Activities commission, Andrea Alemanni– some have already been subject to restyling such as those invia Sannio, Magna Grecia and via Orvieto. Then I also think about the projects for the Unità market in via Cola di Rienzo and the Trionfale market, in which we are making a significant investment in the organization of the activities important but the legislation is also changing and we are implementing it. The old era was oriented towards an outdated market system which led these places to be in difficulty for many years we do things together because we have the same new vision already implemented, for example, at the Cinecittà market or as we did in unsuspecting times at the via Chiana market”.

“The markets – recalled Titti Di Salvo, president of the IX Municipality – had a fundamental function during Covid because people rediscovered the markets as squares. In our Municipality I can say that we carried out a study with La Sapienza for a restyling project of four stall markets, namely Spinaceto, Laurentino, Tor De Cenci and Vigna Murata, to make them recognizable with the slogan ‘I’m market’. They are projects of sustainability, visibility and proximity to markets as squares, places where people can meet and access new services. They are also important initiatives such as Mercati d’Autore because the Municipalities of Rome, which are very large, have always had resources limited. But they have the great power to network, bringing together public, private, communities and associations. And we are doing it in this situation too.”

“We are very happy with this initiative – commented the president of the VIII Municipality, Amedeo Ciaccheri – created in a wonderful place, restored to public use. Here the professionalism of the operators who they will work in the future in the hotel sector but also in the local agri-food supply chain. The markets are imagining new paths to build a new job opportunity for those who produce, those who trade locally and those who continue to think that, within our cities, we can still. imagine an alternative model to large-scale distribution and which enhances neighborhood trade. We work to enhance these public spaces also as places for relationships, and we are doing so for the markets of the VIII Municipality which are transforming we are renovating them: I am thinking of the Santa Galla market or the Navigatori pizza market, where more suitable places will be created, redesigned for today’s city, but also of the historic Garbatella market strong> which for years hosted the farmer’s market and which now, with Jubilee funds, we are redesigning”.

News for the markets may also come from Agro Camera “the impression is that a very rapid evolution is underway in the markets – Hausmann clarified – in particular regarding the administration and food preparations to the point of sale. The idea we work on is that of small manuals of correct practice and guidelines for those who want to do this activity, thinking about the topic of food safety”.

“We have finally reached the end of this beautiful journey – concluded Antonio D’Angelo, CEO of Mercati d’Autore– We started last October with a first event at the Casal de Crazy. Today we conclude in this fantastic location in the Appia Antica park after eight other mini events in the markets. We have always put the markets at the centre, spoken with the institutions and with the people. Between good food and joy. The aim is also to exchange ideas and proposals for the future of the markets, which are in great development. Covid had already brought customers much closer because it had prevented people from going beyond their neighborhood. But the change was already underway with a significant decline in large-scale retail trade growth of markets also as new squares, places for administration and spaces for artisan workshops”.

During the day, the awards of the Narducci-Puleio prize also took place, the competition established in memory of the young chef Alessandro Narducci and his collaborator, rang chef Giulia Puleio, who passed away a few years ago in a road accident. The students of the five hotel schools involved challenged each other in the kitchen (Ugo Tognazzi from Velletri, Apicio Colonna Gatti from Anzio, Rosario Livantino from Palestrina-Cave, Buonarroti from Fiuggi and Tor Carbone-Narducci from Rome) , under the watchful eye of four chefs, Daniele Lippi, Davide Puleio, Giuseppe Di Iorio, Massimo Vignetti, and chef Iside De Cesare.
